The Best Breakfast : Consider Pancakes

Hot, fluffy, and fresh of the griddle and stacked up high! There’s nothing quite as savory, delicious and innerspring as pancakes. And did you know there are literally thousands of ways to prepare this tasty treat.

With so many types of pancakes, how does one choose? Start by looking through our list of 101 Types of Pancakes. While buttermilk, chocolate chip, and bluberry are the best known types of pancakes, there and many amazing pancake recipes to try.

While no one wants to eat the same breakfast every day, you could have pancakes every day for years and never feel like you’ve had the same breakfast twice!

The Best Breakfast : Skip Processed Food

When sitting down to eat breakfast, it doesn’t get anymore satisfying than knowing you’ve just made your own food. Skipping the processed food and realizing you “are what you eat”, is the beginning to a healthy lifestyle.

Pancakes are great breakfast choice because they can be made from scratch quickly. Using a simple pancake recipe, you can be servings a healthy breakfast in 10 minutes.

The Best Breakfast: Pancakes Presentation

Pancakes have a stereo type. They are always round and golden in shape. This is just not true. All pancake recipes do start off as pancake batter, but there are as many ways to present and serve pancakes as there are varieties of pancakes!

Pancakes can be shaped with pancake molds or pancake pens. For toppings, you can use syrups, fresh fruits, peanut butter, Nutella, honey,..this list is endless.

The Best Breakfast: Not A Joke

While finding the best breakfast is no laughing matter, there are some pancake jokes that will give you and your family something to laugh about while eating the best breakfast you have had in a long time.

Union Jack Flapjack

There’s American English and British English. For example, did you know British folks call blueberry pancake “clammy rogers”? Even SIRI on the iPhone has a different voice for the British. Who knew communication could be so hard.

Even though we live on oppose sides of the pond, we both fancy our pancakes. So we figured why always make tasty American pancakes, let’s make some tasty British cakes!

Is that a spatula in your pocket?

Some people get all worked up when it’s time to perform, in the kitchen. They have performance anxiety. They might be concerned that if their guests eat out a lot, they might not enjoy amateur cuisine. Our they might be concerned about squeezing their batter all over and making a mess. Our advise, don’t stress out. Everyone does it. Some better than others. In time, you’ll learn how to use that spatula like a pro.

Step 1: Lubricate

You don’t want the pancakes sticking to your griddle. You want to be able to gently slide your spatula under the pancake before turning it over. So even if you have a non-stick griddle, use a cooking spray to lubricate the surface a bit. If you make a mess, just use a paper towel to clean up any wet spots.

Step 2: Mix It Up a Bit

If you haven’t done it often, you’ll better off using a pancake mix then your own pancake recipe. With many pancake mixs, you simply have to add water. And if you make a mistake, you can do it again quickly. If your using your own recipe and something goes wrong, it may take your 20 minutes to mix up all the ingredients again.

Step 3: Try Different Colors

No one likes to eat the same thing, over and over, every day. Sometimes, it just feels like you have ball and chain on your foot and you just need to break out and try something new. Use some food coloring in your mix. From our experience, two or three at the same time is plenty. Any more, and you start to loose track of what goes where. For the flag, we made three bowls of batter…one plain (for the white), one with red food color, and one with blue food coloring.

Step 4: Use a Toy

We loaded our batter into squeeze bottles using a funnel. While these bottles feel award at first, you can really deliver it exactly where you need it.

Step 5: Go slow

Keep the heat down, you don’t want to burn out too quickly. Set your griddle at 200 degrees, this will keep the colors from browning.

Step 6: Don’t Spank It!

Resist the urge to pat or spank the top of the pancake with your spatula. Just leave it be.

Step 7: Have a fag

If you a smoker, go enjoy a puff. You deserve it. If you don’t smoke, just stand in aw of what you have just done.

But our guess is after tasting these delicious peppermint treats, Santa is going to need Rudolph to guide him to IHOP, because you will have eaten all his pancakes!

Pancake Mold

For this holiday pancake recipe, we utilized a Christmas tree pancake mold to make our pancakes a bit more merry. There is nothing that says you can’t use this same recipe to make normally shaped round pancakes.

However, if your one of those people that have more Christmas decor than Macy’s in your house, you can enhance your pancake presentation with a Christmas tree pancake mold. Williams Sonoma sells a set of Christmas pancake molds, including a Xmas tree and other holiday shaped molds. We got our tree mold on Ebay this year to help save a few dollars.

Here’s a view of our pancake griddle filled with green pancake batter inside the mold.

Peppermint Pancakes

When choosing ingredients for this pancake recipe, we knew immediately we wanted to incorporate peppermint. It seems every time you turn page in a Christmas catalog or go in a grocery store our the holidays, you see peppermint. That’s because its red and white colors are a perfect match for the holiday season.

In Walmart, we picked up some Andes Peppermint chunks and some peppermint extract. We added a small amount of green food coloring, the extract, and the peppermint chunks in our pancake mix.

Ingredients

• 1 1/4 cups all-purpose flour
• 2 tablespoons sugar
• 3/4 teaspoon salt
• 2 teaspoons baking powder
• 1 egg
• 1 1/3 cups milk
• 3 tablespoons vegetable or canola oil
• 3 drops green food coloring
• 2 teaspoons peppermint extract
• 1/4 cup of peppermint chunks

Directions

1. Mix all the dry ingredients together in one bowl (flour, baking powder, sugar, salt).
2. Mix all the liquid ingredients together in another bowl (egg, milk, oil, peppermint extract).
3. Combine the two bowls and mix together.
4. Add three drops of green few coloring and 1/4 cup of peppermint chunks and mix.

The Griddle Who Stole Christmas

Don’t let your griddle turn you into a Grinch. First heat your griddle to around 300-325 (we usually cook pancakes around 350 but turn it down a bit when using a pancake mold) Check that its ready by throwing a few drops of water on top. If they start dancing like sugar plum fairys, your ready to cook.

Coat the pancake mold with oil. Its easiest to use a spray oil (we use spray canola oil). The spray helps get the oil in the creases of the mold. But if you don’t have a spray, you can just dip your finger in oil and rub it on.

Place the pancake mold on the griddle and fill modestly. The pancake mix will rise more in the mold since it can’t spread out. Use a spoon to quickly nudge the pancake mix into the creases before it settles.

After the pancake starts to bubble a bit, slowly remove the mold so as to not disturb the shape. The pancake is ready to be flipped, but choose you point of entry with the spatula. You don’t want to mess up the shape…we picked the base of the Christmas tree as our spatula entry point so as not to degrade the branches or tips of the tree.

Flip the pancake and cook for another 30-45 seconds. The less you cook, the lighter green the second side will be. However, not cooking it long enough will make the pancake mushy and not thoroughly cooked through. Typically with pancakes, the first side cooked is the best looking side of the pancake. However, with the green food coloring and the Christmas theme, the second side cooked has the better Christmas tone.

Clean the pancake mold off between uses with tap water and re-apply oil.

Christmas Pancake Presentation

Once the Christmas tree pancake was completed, we put it on a Lenox Holiday Christmas plate. Then we added some powered sugar on the edges of the tree branches and around the pancake itself. We found some sprinkles that were more rounded that appeared like Christmas tree ornaments.

For a star on top of the tree, you could use a piece of apple; however, it will brown quickly. So we cut a slice of yellow squash and used a pairing knife to make a star shape. For some reason, making this star seemed like the hardest part. Drawing a star is easy, but cutting one seemed to be a challenge for us! But one or two attempts, and we nailed it.

For added effect, you can make a few Christmas presents out of pancakes at the base of the tree. Just use a small squeeze bottle to first drop ribbon on the griddle. Let it cook for a minute, then make the body of the Christmas present. This makes the ribbon stand out, as its darker. Or you can just use a pancake pen and whip out a few quick Christmas stockings.

We topped our pancake with pure honey. You could use maple syrup, but the yellow honey seemed more like Christmas tree garland colored. We drizzled it with a diagonal pattern over the tree for the full effect.

The pancakes have a wonderful taste and pop with peppermint colors! Also good with fruit and berrys!

Cooking a real turkey is so much work and honestly, its not helping the bird. Turkey pancakes are a recipe for celebration and a time to give thanks to all those who have “flipped” some flap-jacks before us. So start a new family tradition with pancakes that are Gobble Gobble Good!

How To Make Your Own Turkey Pancakes

To make turkey pancakes you will need the following

• Pancake mix
• Food coloring
• A squeeze bottle or empty ketchup bottle
• An almond
• Two chocolate chips
• A bit of creativity

Start by making one medium-large sized pancake. Try to make it as round as possible. This will serve as the body of the bird. Next make a smaller pancake to serve as a head.

Stack the smaller pancake on top of the larger pancake on a plate to get a sense of size. It may take a few passes to get the head proportional to the body. Once completed, this will provide insight into the size of the pancakes required for the turkey’s feather.

For feathers, mix food coloring into the pancake batter. We mixed some yellow and green into two bowls of plain pancake mix.

We also used some Red Velvet pancake mix we found at Walmart for the red feathers





Next loaded the colored pancake mix into a squeeze bottle (You can also use an old empty ketchup bottle). Draw out long ovals shapes and quickly fill in the center by squeezing harder to get the pancake batter flowing faster.

Present Your Turkey Pancakes

Finally top off your turkey and split almond for a nose and two chocolate chips for the eyes. Position the chips upside down and push them into the pancake.

Now show off your bird to your family, enjoy your Thanksgiving batter feast, and gobble until you wobble!

Ingredients

Here is a basic chocolate-chip pancake recipe:

• 1 1/4 cups all-purpose flour
• 2 tablespoons sugar
• 3/4 teaspoon salt
• 2 teaspoons baking powder
• 1 egg

• 3 tablespoons canola or vegetable oil
• 1 bag of Nestle chocolate chips

Directions

1. Mix all the dry ingredients (expect the chips) together in the first mixing bowl (flour, baking powder, sugar, salt).
2. Mix all the liquid ingredients together in a second mixing bowl (egg, milk, oil).
3. Combine the two mixtures by pouring the liquid mixture into the dry mixture. Whisk together. If the batter is two thick, add more milk until the pancake batter has the consistency of thick gravy.
4. Using a gravy or soup spatula, load pancake batter into a patter dispenser.

A batter dispenser isn’t required, but makes it easy to pour perfectly round pancakes. After pouring 4-6″ inch pancakes on the griddle, add 5-10 chocolate chips to each pancake by hand. Try to separate them so they don’t all melt until large globes of chocolate. Get creative, and use the chips to make two eyes and a smiley face or create your own designs.

Once the pancakes begin to bubble on top, they are ready to flip. Use your spatula to pry up the edge and check underneath to ensure the bottom side is golden brown and done cooking. Flip the pancakes and cook for another 2-3 minutes.

Prepare the ice cream ahead of time. Start by letting the ice cream defrost for 15 minutes until its soft enough to cut with a knife. Cut two slices of ice cream from the container. Make each slice about 1/4″ high (or the same height as a fluffy pancake). The easiest method is to actually cut through the paper container and just peal off the paper once you have your ice cream slice.



Once you after two slices of ice cream, use a round pancake mold to shape the ice cream into round disks that will match the size of the pancakes your will make later. Just press the round mold into the center of the soft ice cream and push away the access with your fingers. At this point, put the ice cream disks back in the freezer for 30 minutes to make it solid as a rock again.



After re-freezing your ice cream, its time to add Magic Shell. This is a liquid chocolate spread that turns to a solid in about 20 seconds after making contact with cold ice cream. Start by elevating the ice cream disk off the plate by putting a few crackers or an oreo underneath…anything just to raise it a bit off the plate. Then cover it with magic shell sauce and quickly use your fingers to spread it evenly over the ice cream. This is difficult since it starts to solidify in seconds. Now place the two ice cream disks back in the freezer.

After making your pancakes, insert your ice cream disks between the pancakes, as if the pancakes are the ends of a double decker ice cream sandwich. Then add another scoop of ice cream on top. Circle some whipped cream around the base and add chocolate sprinkles. Now that’s what I call one kick-ass chocolate-chip ice cream tower!
